Roots.

 

Having supplied chef Tommy Banks with table knives for Michelin starred The Black Swan, I was delighted to be approached again to supply knives for his latest Michelin starred restaurant, Roots.

All the same, but different.

50 knives, all individual in appearance but united in their overall look.
To cope with the demands of daily use in a busy restaurant, the Walnut heartwood has had all of the air removed from it’s pores in a custom designed vacuum chamber. These pores are then flooded with a food safe resin. This process prevents moisture altering the structure of the handle.

Classic looks.

The blade steel is an extremely clean stainless variant which has been hand ground and heat teated to form a super sharp edge. The final cutting edge is formed using Japanese water stones.

The finished set of knives look great in their beautiful new home. The contemporary blade shape paired with the classic look of walnut and brass are sure to delight diners for years to come.
